A former Icelandic National Team handball and soccer player, she was introduced to American football by her husband, Kyle, whom she met under serendipitous circumstances while he was on a sabbatical in Iceland. Since then, her love for the game and the Vikings has only grown. The couple has even traveled internationally to support the team before settling permanently in the States.

Professionally, Olof has made significant contributions both on and off the field. She recently completed her doctorate in nursing at the University of Minnesota and has been actively involved in combating the COVID-19 pandemic. Besides her role as an assistant professor of nursing at St. Catherine’s University, she has volunteered to support health facilities struggling during the pandemic in various U.S. states.

The event was more than just a fan meeting; it was a recognition of Olof’s resilience and commitment. As she recovers from a torn ACL, her story resonated with Jefferson, who lauded her as “Superwoman” for her diverse roles as a nurse, coach, and football player.
